Ingredients: 
700g parsnips
1 large or two small onions
1 large apple
2 cloves garlic
1 tsp turmeric
1 tsp ground ginger
1 tsp ground cumin
1 tsp ground corriander
1/2 tsp cardamon pods
2 pints vegetable bouillon

Method: 

  • Chop the onions, crush the garlic and peel and chop the parsnips into small pieces.
  • Gently sauté the onions for 5 minutes before adding the garlic.
  • Stir in the spices and heat gently to release their flavour.
  • Add the parsnips with the stock and season well.
  • Simmer gently for half an hour, then grate the apple into the soup.
  • Blitz the soup and season again if needed.
