600g root veg (carrots, parsnips, celeriac, swede)
2 onions
2tbsp cumin seeds
5 cloves of garlic
350g quinoa
Sprinkling of parsley and coriander
480ml vegetable stock
100ml chermoula
For the chermoula:
100g fresh coriander
100g fresh parsley
4 garlic cloves
1 lemon
1tbsp ground paprika
1tbsp ground cumin
1 chilli, seeded
300ml olive oil
Salt and pepper to taste
