Ingredients: 
250g basmati rice
200g fresh borlotti beans
2 leeks
2 cloves of garlic
1tbsp cumin seeds
2tbsp raisins
50g flaked almonds
2tbsp olive oil

Method: 

  • Cook the basmati rice
  • Gently toast the flaked almonds
  • Meanwhile pod the borlotti beans and steam until tender (about 7 minutes)
  • Slice the leeks and finely chop the garlic
  • Heat the olive oil in a large frying pan, then sauté the leeks for around 5 minutes
  • Add the garlic and cook for another 2-3 minutes
  • Now add the cumin seeds and stir around for a minute
  • Stir in the rice, beans and raisins and season with salt and pepper
  • Sprinkle with almonds to serve
